My Grandmother’s Lentil Soup
This is one of my favourite recipes, passed down from my grandmother. It is healthy, cheap and perfect for a cold evening. Best of all, it is very simple to make. It takes about 40 minutes and serves four people.
Ingredients: 1 cup of red lentils, 1 onion, 2 carrots, 2 cloves of garlic, 1 spoon of cumin, 1 litre of vegetable stock, salt, and a little olive oil.
Method
Begin by washing the lentils well. Chop the onion, carrots and garlic. Heat the oil in a large pot and gently fry the onion until it is soft. Add the garlic, carrots and cumin, and cook for two minutes. Then add the lentils and the stock. Bring everything to the boil, then lower the heat and let it simmer for about 25 minutes, until the lentils are soft. Add salt to taste. For a smoother soup, you can blend it. Serve hot with fresh bread. Enjoy!
